roasted potatoes and bacon
This recipe is also from F&W magazine. 2 of my favorite foods, potatoes and bacon -- why haven't I thought to try this before?
Grocery list: small red or fingerling potatoes, rosemary, 4-5 thick slab cut bacon.
Cut the potatoes into bite-size pieces. Cut squares of bacon. Take a few sprigs of rosemary and stab them into each piece of bacon, then thread the bacon and potatoes onto skewers. Drizzle olive oil over the skewers in a foil-lined pan, salt & pepper them. Roast at 350 degrees for 40-45 minutes until bacon is crispy, turning mid-way.
*note about skewers - I used sturdy wooden ones but metal would probably work better so the potatoes don't stick to them.
